Has anyone any idea about how many professional orchestras there are in the US? I don't mean only the 'world class' orchestras but including small cities and state orchestras. Also, do some of these 'share' musicians? For example, do members of the Vermont Symphony Orchestra also play in the Albany Symphony Orchestra? Many of these groups do not record.

Check with the American Symphony orchestra league [ASOL]- they put out an annual listing of prchestras in several different categories.
Also, do some of these 'share' musicians?'
yes - it is very common
