I was reading a text last night that was talking about producing jazz chords, and it mentioned using 5-2-1 with the left hand, and playing the root with the right.

So....... Using middle C as an example of the root, what would I play with the left hand, using the 5-2-1 method?

Are you sure they weren't talking about 2-5-1? That's a progression. So, for C, you would play first the minor 2 chord, Dm7. Then, for 5, play the dominant 5 chord, G7. Then the 1, the tonic, is the C.

I'd even say C7 or Cmaj7 (depending on the tune), although I'm by no means an expert? And I may also get an explanation

Usually Cmaj7. Usually, if its C7, the song will specifically say so. In jazz, a piano player would almost never just play a C triad.
